Steak Breakfast Burrito Recipe

Ingredients
  

  • 8 oz cooked steak, thinly sliced
  • 4 large eggs
  • 2 tbsp milk or water
  • 1 tbsp butter
  • ½ cup shredded sharp cheddar cheese
  • 2 large flour tortillas (burrito-size)
  • ¼ cup salsa or pico de gallo
  • Salt and black pepper
  • Hot sauce, optional

Method
 

  1. Warm each tortilla in a dry skillet over medium heat for about 30 seconds per side, then wrap in a towel to keep warm.
  2. Melt the butter in the skillet over medium-low heat. Whisk eggs with milk and a pinch of salt, then scramble to soft curds, 2–3 minutes. Stir in cheese off the heat.
  3. Add sliced steak to the skillet and toss over medium heat until warmed through, 1–2 minutes. Season lightly with salt and pepper.
  4. Lay a tortilla flat, fill with half the eggs, steak, salsa, and hot sauce, then fold in the sides and roll tightly. Slice and serve right away.

Notes

This recipe is built for leftover steak, but if you’re cooking one from scratch, sear it quickly before the eggs and let it rest while you scramble. The total time accounts for assembly with already-cooked steak; starting from raw adds about 10 minutes.
