Steak Alfredo Pasta Recipe

Ingredients
  

  • 1 lb sirloin steak
  • Salt and black pepper
  • 2 tbsp olive oil
  • 8 oz fettuccine
  • 3 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • Pinch of nutmeg (optional)
  • Fresh parsley for garnish

Method
 

  1. Cook fettuccine in salted boiling water until al dente; reserve ½ cup pasta water, then drain.
  2. Pat steak dry, season, and sear in hot oil for 3 to 4 minutes per side; rest on a board.
  3. In the same skillet, melt butter, sauté garlic, add cream, and simmer until thickened; off heat, stir in Parmesan.
  4. Toss pasta into the sauce, adding reserved pasta water as needed to thin it.
  5. Slice steak against the grain, place over pasta, and finish with fresh parsley.

Notes

If your skillet is on the small side, sear the steak in two batches so each piece gets good browning instead of steaming. The sauce will thicken as it cools, so serve it right away while it’s still loose and glossy.
