- Preheat the oven to 350°F (175°C). Toast the walnuts on a baking sheet for 5 to 7 minutes; set aside to cool.
- In a large bowl, mash the bananas, then whisk in the melted butter, brown sugar, egg, vanilla, and sour cream until smooth.
- In a separate bowl, whisk the flour, baking soda, salt, cinnamon, and nutmeg. Fold the dry ingredients into the wet just until no white streaks remain, then fold in the toasted walnuts.
- Pour the batter into a greased 9×5-inch loaf pan and smooth the top. Bake for 55 to 65 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Let the loaf cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely before slicing.
Notes
For an even deeper flavor, wrap the cooled loaf and let it rest on the counter overnight. The bread also freezes well for up to 3 months when wrapped first in plastic, then in foil.
