- Rinse the sushi rice until water runs clear, then cook with 2 ½ cups water until tender. Fold in the rice vinegar, sugar, and salt while warm.
- Combine the drained tuna, mayonnaise, sriracha, and soy sauce. Mix gently until a creamy, flaky mixture forms.
- Spread the seasoned rice into a greased 8×8-inch dish. Drizzle with sesame oil, then top with the tuna mixture. Add a drizzle of extra spicy mayo and sprinkle with 1 tablespoon furikake.
- Bake at 400°F for 20 minutes until the edges bubble and the top is set.
- Broil on the top rack for 2 to 3 minutes until golden and crisp. Remove from the oven, garnish with green onions and more furikake, and serve immediately with nori sheets.
Notes
Let the bake sit for 3 to 4 minutes before scooping so the layers hold together better. The broiling time is short, so stay right by the oven and pull the dish the moment you see even browning.
