Spicy Tuna Sushi Bake Recipe

Ingredients
  

  • 2 cups sushi rice
  • 2 ½ cups water
  • 2 tbsp unseasoned rice vinegar
  • 1 tsp granulated sugar
  • ½ tsp fine sea salt
  • 2 (5-ounce) cans solid white albacore tuna in water, drained
  • ¼ cup kewpie mayonnaise
  • 2 tbsp sriracha
  • 1 tsp soy sauce
  • 1 tsp toasted sesame oil
  • 1 tbsp furikake, plus more for serving
  • 2 green onions, thinly sliced
  • Toasted nori sheets, for serving

Method
 

  1. Rinse the sushi rice until water runs clear, then cook with 2 ½ cups water until tender. Fold in the rice vinegar, sugar, and salt while warm.
  2. Combine the drained tuna, mayonnaise, sriracha, and soy sauce. Mix gently until a creamy, flaky mixture forms.
  3. Spread the seasoned rice into a greased 8×8-inch dish. Drizzle with sesame oil, then top with the tuna mixture. Add a drizzle of extra spicy mayo and sprinkle with 1 tablespoon furikake.
  4. Bake at 400°F for 20 minutes until the edges bubble and the top is set.
  5. Broil on the top rack for 2 to 3 minutes until golden and crisp. Remove from the oven, garnish with green onions and more furikake, and serve immediately with nori sheets.

Notes

Let the bake sit for 3 to 4 minutes before scooping so the layers hold together better. The broiling time is short, so stay right by the oven and pull the dish the moment you see even browning.
