Spicy Tuna Rice Bowl Recipe

Ingredients
  

  • 1 cup sushi rice (or short-grain white rice)
  • 1 (5 oz) can tuna, drained
  • ½ avocado, sliced
  • ½ cucumber, sliced into half-moons
  • 2 tbsp mayonnaise
  • 1 tsp sriracha
  • 1 tsp soy sauce
  • ½ tsp toasted sesame oil
  • 1 tsp sesame seeds (optional)
  • 1 sheet nori, cut into thin strips (optional)

Method
 

  1. Rinse rice until water runs clear, combine with 1¼ cups water in a saucepan, bring to a boil, then cover, reduce heat to low, and simmer 15 minutes. Remove from heat and let stand, covered, 5 minutes, then fluff.
  2. Stir together mayonnaise, sriracha, soy sauce, and sesame oil until smooth.
  3. Divide rice between bowls, top with tuna, avocado, cucumber, nori, and sesame seeds, then drizzle with spicy mayo and serve immediately.

Notes

If you’re starting with leftover rice, you skip the cooking step and this bowl comes together in 5 minutes. Any short-grain white rice works, but sushi rice gives the best sticky texture that holds the toppings.
