Spicy Tuna Rice Bowl Recipe

Ingredients
  

  • 2 (5 oz) cans solid white tuna in water, drained
  • 3 tbsp mayonnaise
  • 1 tbsp sriracha
  • 1 tsp soy sauce
  • 1/2 tsp toasted sesame oil
  • 2 cups cooked warm rice
  • 1 small cucumber, sliced
  • 1 ripe avocado, sliced
  • 2 green onions, thinly sliced
  • 1 tbsp sesame seeds
  • Nori sheets (optional)

Method
 

  1. Stir together mayonnaise, sriracha, soy sauce, and sesame oil until smooth.
  2. Flake the drained tuna into a bowl, add the spicy sauce and green onions, and fold gently until coated.
  3. Divide warm rice between two bowls, then top with the spicy tuna, cucumber, and avocado.
  4. Drizzle extra spicy mayo on top, scatter sesame seeds, and add nori if using. Serve right away.

Notes

If you don't have cooked rice on hand, microwaveable rice packets shave off even more time. Leftover rice works beautifully here because the grains firm up slightly and hold the toppings without getting mushy.
