Spicy Tuna Onigirazu Recipe

Ingredients
  

  • 2 cups cooked sushi rice, seasoned (cooled)
  • 2 large nori sheets
  • 1 (5 oz) can tuna, drained
  • 2 tbsp mayonnaise
  • 1 tsp sriracha
  • 1 tsp soy sauce
  • ½ tsp sesame oil
  • ½ avocado, sliced
  • ¼ English cucumber, thinly sliced
  • 4 butter lettuce leaves
  • Small bowl of water

Method
 

  1. In a bowl, mix the tuna, mayonnaise, sriracha, soy sauce, and sesame oil until well combined.
  2. Place a nori sheet on plastic wrap, shiny side down. Wet your hands, place ½ cup rice in the center, and press it into a square. Add half the tuna mixture, avocado, cucumber, and lettuce. Top with another ½ cup rice, pressing it into a square.
  3. Fold the nori corners over the rice like an envelope, seal with water, and wrap tightly in plastic wrap. Let it rest 5 minutes, then slice in half with a serrated knife. Serve immediately.

Notes

Cook and season the sushi rice ahead of time, then chill it for at least 30 minutes. If the rice feels dry, sprinkle a little water and re-fluff it. For neat layers, press each rice square firmly with damp fingers.
