Spicy Salmon Sushi Bake Recipe

Ingredients
  

  • 1 ½ cups uncooked sushi rice
  • 2 tbsp rice vinegar
  • 1 tbsp granulated sugar
  • 1 tsp fine salt
  • 1 lb skinless salmon fillet, diced small
  • 4 oz cream cheese, softened
  • 3 tbsp mayonnaise
  • 2 tbsp sriracha
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • ¼ cup panko breadcrumbs
  • 1 tbsp sesame seeds
  • 1 tsp sesame oil or cooking spray
  • Nori sheets, for serving

Method
 

  1. Rinse rice, cook it, then season with vinegar, sugar, and salt.
  2. Mix diced salmon, cream cheese, mayo, sriracha, soy sauce, and sesame oil until creamy.
  3. Press the rice into a greased 9×9-inch dish and spread the salmon mixture on top.
  4. Toss panko with sesame seeds and oil, sprinkle over the salmon, and bake at 400°F for 20 to 25 minutes until golden and bubbly.
  5. Cool 3 minutes, then scoop onto nori sheets and serve.

Notes

Let the bake rest a few minutes before scooping so the rice and topping stay in place. If your salmon was very cold, you may need an extra 2 to 3 minutes of bake time.
