- Rinse rice, cook it, then season with vinegar, sugar, and salt.
- Mix diced salmon, cream cheese, mayo, sriracha, soy sauce, and sesame oil until creamy.
- Press the rice into a greased 9×9-inch dish and spread the salmon mixture on top.
- Toss panko with sesame seeds and oil, sprinkle over the salmon, and bake at 400°F for 20 to 25 minutes until golden and bubbly.
- Cool 3 minutes, then scoop onto nori sheets and serve.
Notes
Let the bake rest a few minutes before scooping so the rice and topping stay in place. If your salmon was very cold, you may need an extra 2 to 3 minutes of bake time.
