Spicy Ramen Noodles Recipe

Ingredients
  

  • 2 packages instant ramen noodles (discard seasoning packets)
  • 2 tbsp gochujang (Korean chili paste)
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • 1 tsp rice vinegar
  • 1 tbsp neutral oil (vegetable or canola)
  • Sliced scallions and sesame seeds, for serving

Method
 

  1. Cook the ramen noodles (discard seasoning packets) until just shy of the package time, about 3 to 4 minutes, then drain and rinse with cold water.
  2. In a small bowl, whisk together the gochujang, soy sauce, brown sugar, sesame oil, and rice vinegar until smooth.
  3. Heat the neutral oil in a large skillet over medium-high heat. Add the garlic and stir constantly until fragrant, about 30 seconds.
  4. Add the noodles and sauce to the skillet, toss until coated and heated through, about 1 to 2 minutes, then serve right away with scallions and sesame seeds.

Notes

This dish is at its best immediately after tossing. If you store leftovers, the noodles will soak up more sauce and soften. For a fresh batch, cook only what you’ll eat.
