- Boil eggs for 6 minutes, then transfer to an ice bath. Peel and set aside.
- In a pot over medium heat, cook garlic and ginger in 1 tsp sesame oil for 1 minute. Pour in broth, whisk in miso, gochujang, and soy sauce, and simmer for 5 minutes.
- Add ramen noodles and cook until tender, 3-4 minutes. Remove from heat.
- Divide broth and noodles into bowls, top with halved eggs, corn, green onions, remaining sesame oil, and nori. Add chili crisp if desired.
Notes
The broth alone can be made a day ahead and chilled. For the best texture, cook noodles fresh just before serving. The soft-boiled eggs can be boiled up to a day in advance and stored in the fridge.
