Spicy Miso Ramen Recipe

Ingredients
  

  • 4 cups low-sodium chicken broth
  • 3 tbsp white miso paste
  • 1 tbsp gochujang (Korean chili paste)
  • 1 tbsp soy sauce
  • 2 tsp toasted sesame oil, divided
  • 3 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 2 large eggs
  • 8 oz fresh ramen noodles
  • 1 cup fresh or frozen corn kernels
  • 2 green onions, thinly sliced
  • 4 sheets nori
  • 1 tsp chili crisp (optional)

Method
 

  1. Boil eggs for 6 minutes, then transfer to an ice bath. Peel and set aside.
  2. In a pot over medium heat, cook garlic and ginger in 1 tsp sesame oil for 1 minute. Pour in broth, whisk in miso, gochujang, and soy sauce, and simmer for 5 minutes.
  3. Add ramen noodles and cook until tender, 3-4 minutes. Remove from heat.
  4. Divide broth and noodles into bowls, top with halved eggs, corn, green onions, remaining sesame oil, and nori. Add chili crisp if desired.

Notes

The broth alone can be made a day ahead and chilled. For the best texture, cook noodles fresh just before serving. The soft-boiled eggs can be boiled up to a day in advance and stored in the fridge.
