Spicy Mango Pickle Recipe

Ingredients
  

  • 500g raw green mangoes (about 3 medium)
  • 4 tbsp salt
  • 3 tbsp mustard seeds
  • 1 tbsp fenugreek seeds
  • 2 tbsp fennel seeds
  • 1 tsp nigella seeds (kalonji)
  • 1 tsp turmeric powder
  • 2 tbsp red chili powder
  • 1/4 tsp asafoetida (hing)
  • 120 ml mustard oil

Method
 

  1. Toss mango cubes with salt, spread on a tray, and sun-dry for 4 to 6 hours until slightly wrinkled.
  2. Dry roast mustard, fenugreek, and fennel seeds over medium heat until fragrant, about 2 minutes. Cool completely, then coarsely grind with nigella seeds.
  3. Mix ground spices, turmeric, chili powder, asafoetida, and mustard oil into a red paste.
  4. Toss dried mango pieces in the masala until well coated, then pack tightly into a clean glass jar.
  5. Seal the jar loosely and place in direct sun for 4 days, shaking once daily. The oil should darken and the mangoes appear plump.
  6. Store in a cool dark place. Spoon out with a clean dry spoon and serve at room temperature.

Notes

Sun-cure the pickle for a full 4 days before tasting; the flavor will deepen over the following weeks. Keep refrigerated for long storage.
