Ingredients
Method
- Boil eggs for 6 minutes, then transfer to an ice bath and let cool at least 5 minutes.
- Blanch bok choy in boiling water for 1 minute; remove, then cook noodles in the same water for 4 minutes. Drain, reserving ½ cup of the starchy water.
- Combine fresh water, reserved noodle water, seasoning packets, soy sauce, and gochugaru in the pot. Simmer 2 minutes, whisking in the butter until melted.
- Divide noodles and broth between bowls. Top with halved eggs, bok choy, cheese, green onions, sesame seeds, and a drizzle of sesame oil. Serve immediately.
Notes
For a faster bowl, boil the eggs the night before and keep them in the fridge. The broth will mellow slightly if it sits, so serve it right after you ladle it over the noodles.
