- Whisk Sriracha, honey, soy sauce, rice vinegar, garlic, ginger, and the cornstarch slurry together in a bowl.
- Pat shrimp dry, season lightly, then sear in hot oil for about 2 minutes per side until pink and golden.
- Lower heat, pour the sauce into the pan, and cook for 1 to 2 minutes until thickened and glossy, tossing to coat the shrimp.
- Serve immediately over rice, topped with scallions and sesame seeds.
Notes
Pat the shrimp very dry so they sear instead of steam, and cook them in a single layer. The sauce thickens fast once it hits the heat, so pull the pan off the moment it is glossy.
