- Preheat oven to 350°F (175°C) and line two baking sheets with parchment. Whisk flour, cocoa, baking soda, salt, chili powder, cayenne (if using), and cinnamon in a bowl.
- Beat butter with both sugars until fluffy and lightened, about 3 minutes.
- Add egg and vanilla, then beat 1 minute until glossy.
- Add dry ingredients and mix on low just until combined. Fold in chocolate chunks.
- Scoop 2-tablespoon dough balls onto sheets, spacing 2 inches apart. Bake 10 to 12 minutes until tops are crackled and edges set. Cool on the sheet 5 minutes, then transfer to a rack.
Notes
Let cookies cool on the baking sheet for those first 5 minutes; they will look soft but firm up without over-baking. If you prefer a deeper chocolate flavor, use a dark cocoa powder and increase the chili powder by 1/2 teaspoon.
