Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup Dutch-process cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp chili powder (ancho or chipotle)
  • 1/4 tsp cayenne pepper (optional)
  • 1/2 tsp ground cinnamon
  • 1/2 cup (1 stick) unsalted butter, very soft
  • 3/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg, at room temperature
  • 2 tsp vanilla extract
  • 1 cup dark chocolate chunks or chips

Method

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment. Whisk flour, cocoa, baking soda, salt, chili powder, cayenne (if using), and cinnamon in a bowl.
  2. Beat butter with both sugars until fluffy and lightened, about 3 minutes.
  3. Add egg and vanilla, then beat 1 minute until glossy.
  4. Add dry ingredients and mix on low just until combined. Fold in chocolate chunks.
  5. Scoop 2-tablespoon dough balls onto sheets, spacing 2 inches apart. Bake 10 to 12 minutes until tops are crackled and edges set. Cool on the sheet 5 minutes, then transfer to a rack.

Notes

Let cookies cool on the baking sheet for those first 5 minutes; they will look soft but firm up without over-baking. If you prefer a deeper chocolate flavor, use a dark cocoa powder and increase the chili powder by 1/2 teaspoon.
