Spicy Chilli Garlic Noodles Recipe

Ingredients
  

  • 200 g dried noodles (lo mein, spaghetti, or udon)
  • 3 tbsp chilli oil
  • 6 garlic cloves, minced
  • 1-2 fresh red chillies, thinly sliced
  • 1 medium carrot, julienned
  • 1 medium bell pepper, thinly sliced
  • 2 spring onions, sliced on the diagonal
  • 2 tbsp regular soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp granulated sugar
  • Salt, only if needed

Method
 

  1. Boil the noodles until just tender, drain, and set aside. While the water boils, heat the chilli oil in a wide skillet over medium heat. Add the garlic and fresh chillies and stir for 30 seconds until fragrant and barely golden.
  2. Add the carrot and bell pepper and cook, stirring occasionally, for 2 to 3 minutes, letting the edges catch a little colour.
  3. Add the drained noodles, both soy sauces, rice vinegar, and sugar to the skillet. Toss everything together for 1 to 2 minutes until the noodles are glossy and hot.
  4. Remove from the heat, stir in most of the spring onions, then divide between bowls. Top with the remaining spring onions and serve immediately.

Notes

If the sauce seems to dry out as you toss, add a spoonful of the noodle cooking water to loosen it. The dish is best eaten right away while the noodles still have a slight chew and the edges are slick.
