Spicy Chicken Marinade Recipe

Ingredients
  

  • 1 lb boneless skinless chicken (thighs or breasts)
  • 3 tbsp soy sauce
  • 3 tbsp fresh lime juice
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 1 jalapeño, minced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp salt

Method
 

  1. Whisk together the soy sauce, lime juice, honey, olive oil, jalapeño, garlic, paprika, cumin, and salt in a bowl.
  2. Place the chicken in a shallow dish or bag, pour the marinade over, and turn to coat. Let sit 15 to 30 minutes at room temperature or refrigerate up to 4 hours.
  3. Heat a grill to medium-high (about 400°F). Remove chicken from marinade and discard the liquid. Grill 5 to 6 minutes per side until the internal temperature reaches 165°F.
  4. Let the chicken rest 3 minutes on a cutting board, then slice against the grain and serve.

Notes

To bake, preheat the oven to 400°F (200°C) and cook for 20 to 25 minutes until 165°F. Avoid marinating longer than 4 hours or the lime juice can make the chicken mushy. If you'd like a sauce, boil the used marinade for at least 3 minutes before serving.
