Ingredients
  

  • 1 lb flank steak, thinly sliced
  • 1 tbsp plus 1 tsp cornstarch, divided
  • 3 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp gochujang
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp water
  • 1 tbsp sesame oil
  • 1 red bell pepper, sliced
  • 1 small onion, sliced
  • 2 green onions, sliced
  • 1 tbsp vegetable oil
  • Sesame seeds

Method
 

  1. In a small bowl, whisk soy sauce, brown sugar, gochujang, garlic, ginger, 1 tsp cornstarch, and water.
  2. Toss beef with remaining 1 tbsp cornstarch and a pinch of salt. Heat vegetable oil in a large skillet over high heat. Sear beef in a single layer 2 minutes per side; transfer to a plate.
  3. Reduce heat to medium-high. Add onion and bell pepper; cook, stirring often, 3 minutes.
  4. Return beef to pan, pour sauce over, stir constantly 1-2 minutes until thickened. Remove from heat, drizzle sesame oil.
  5. Serve over rice, garnished with green onions and sesame seeds.

Notes

If time allows, toss the beef with cornstarch and let it sit for 10 minutes before cooking for extra tenderness. Serve immediately over hot rice.
