- Mix paprika, cumin, cayenne, garlic powder, 1/2 tsp salt, and pepper. Pat chicken dry, rub spice mix all over, and let rest 10 minutes.
- Stir yogurt, lime juice, grated garlic, and pinch salt until smooth. Fold in cilantro. Set aside.
- Heat oil in a large skillet over medium-high. Cook chicken 6-7 minutes per side, until 165°F (74°C). Rest 5 minutes, then slice against the grain.
- Warm tortillas in a dry skillet or over gas, 20 seconds per side, until soft.
- Spread sauce on tortillas, layer lettuce, avocado, and sliced chicken. Add more sauce, roll tightly, and serve with lime wedges.
Notes
Let the chicken rest before slicing so the juices stay in the meat. If your tortilla tears when rolling, warm it a bit longer, it should be very pliable. The spice rub works on any cut of chicken, so feel free to use tenders or thighs.
