Speedy Sesame Ginger Pasta Salad Recipe

Ingredients
  

  • 8 oz spaghetti
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cup shelled edamame
  • 3 scallions, sliced
  • Small handful cilantro, chopped
  • 1 cup shredded cooked chicken (optional)
  • 3 tbsp creamy peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tsp grated fresh ginger
  • 1 small garlic clove, minced
  • Sesame seeds, for garnish

Method
 

  1. Boil the spaghetti in salted water until al dente, about 8 to 10 minutes. Drain and rinse under cold water until cool.
  2. In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic until smooth, about 30 seconds.
  3. In a large bowl, toss the spaghetti with the carrots, bell pepper, edamame, scallions, cilantro, and chicken if using. Pour the dressing over and toss until evenly coated, about 1 minute. Garnish with sesame seeds and serve.

Notes

This salad tastes even better after a 30-minute chill in the fridge, which gives the dressing time to soak into the noodles. If you plan to chill it, keep the vegetables and dressing separate until just before serving to keep the crunch.
