Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons vanilla extract
  • Sparkling sugar, for decorating

Method

  1. Whisk flour, cornstarch, baking powder, and salt. Beat butter and sugar until fluffy, then mix in egg and vanilla. Stir in dry ingredients until just combined. Shape into a disc, wrap, and chill at least 1 hour.
  2. Roll dough to 1/4 inch thick on a floured surface, cut shapes, and place 1 inch apart on parchment-lined baking sheets.
  3. Bake at 350°F for 9 to 11 minutes, until edges are lightly golden. Cool on the sheet for 5 minutes, then transfer to a wire rack.
  4. Brush warm cookies with a little corn syrup mixed with water, then sprinkle with sparkling sugar. Let cool completely so the sugar sets.

Notes

The dough needs to chill for at least 1 hour; this time is not reflected in the total. For the cleanest shapes, reroll the scraps only once so the dough stays tender.
