Method
- Whisk flour, cornstarch, baking powder, and salt. Beat butter and sugar until fluffy, then mix in egg and vanilla. Stir in dry ingredients until just combined. Shape into a disc, wrap, and chill at least 1 hour.
- Roll dough to 1/4 inch thick on a floured surface, cut shapes, and place 1 inch apart on parchment-lined baking sheets.
- Bake at 350°F for 9 to 11 minutes, until edges are lightly golden. Cool on the sheet for 5 minutes, then transfer to a wire rack.
- Brush warm cookies with a little corn syrup mixed with water, then sprinkle with sparkling sugar. Let cool completely so the sugar sets.
Notes
The dough needs to chill for at least 1 hour; this time is not reflected in the total. For the cleanest shapes, reroll the scraps only once so the dough stays tender.
