Sparkling Sakura Cherry Blossom Drink Recipe

Ingredients
  

  • 1/4 cup dried sakura (cherry blossom) flowers
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1/4 cup freshly squeezed lemon juice
  • 1 1/2 cups plain sparkling water
  • Ice, for serving
  • Optional: lemon slices or extra blossoms for garnish

Method
 

  1. In a small saucepan, combine water, sugar, and sakura blossoms. Stir over medium heat until sugar dissolves, then simmer for 4 minutes.
  2. Remove from heat, steep 10 minutes, then strain syrup into a jar, pressing blossoms gently. Cool to room temperature, then chill until cold, about 30 minutes.
  3. Fill two glasses with ice. In a pitcher, stir chilled syrup, lemon juice, and sparkling water. Pour into glasses and garnish if you like. Serve immediately.

Notes

The syrup needs a 10-minute steep and about 30 minutes of chilling before you assemble the drinks; those times are not included in the prep and cook totals. You can make the syrup up to 2 weeks ahead and keep it in the fridge.
