Spanish Rice Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 1 cup long-grain white rice
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (8 oz) can tomato sauce
  • 1 3/4 cups chicken broth
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp smoked paprika (optional)
  • Pinch cayenne pepper (optional)
  • 1 tbsp fresh lime juice
  • Chopped fresh cilantro, for serving

Method
 

  1. Heat oil in a medium saucepan over medium heat. Add onion and cook, stirring, for 3 minutes until softened. Add garlic and cook 30 seconds more.
  2. Add rice and stir constantly for 2 minutes, until grains look opaque and smell nutty.
  3. Pour in tomato sauce, broth, cumin, garlic powder, salt, paprika, and cayenne. Stir, bring to a boil, then cover, reduce heat to low, and simmer for 18 to 20 minutes until liquid is absorbed.
  4. Remove from heat and let sit, covered, for 5 minutes. Uncover, drizzle with lime juice, fluff with a fork, and top with cilantro. Serve warm.

Notes

For a looser, soupier texture, add an extra 1/4 cup of broth before simmering. The rice can sit covered off the heat for up to 10 minutes if you’re not ready to serve right away.
