- Heat oil in a medium saucepan over medium heat. Add onion and cook, stirring, for 3 minutes until softened. Add garlic and cook 30 seconds more.
- Add rice and stir constantly for 2 minutes, until grains look opaque and smell nutty.
- Pour in tomato sauce, broth, cumin, garlic powder, salt, paprika, and cayenne. Stir, bring to a boil, then cover, reduce heat to low, and simmer for 18 to 20 minutes until liquid is absorbed.
- Remove from heat and let sit, covered, for 5 minutes. Uncover, drizzle with lime juice, fluff with a fork, and top with cilantro. Serve warm.
Notes
For a looser, soupier texture, add an extra 1/4 cup of broth before simmering. The rice can sit covered off the heat for up to 10 minutes if you’re not ready to serve right away.
