- Heat oil in a skillet, brown the beef over medium-high until deeply dark, about 6 to 8 minutes.
- Reduce heat, cook onion until soft, then add garlic, oregano, and tomato paste, stirring until paste darkens.
- Add wine, scrape up browned bits, and let reduce by half. Stir in crushed tomatoes, salt, and pepper, then bring to a simmer.
- Cover partially and simmer on low for 20 to 25 minutes until thick.
- Cook spaghetti in salted water, reserve some pasta water, drain, toss with half the sauce and a splash of pasta water, then plate with remaining sauce and Parmesan.
Notes
The sauce can be made a day ahead; reheat gently with a splash of water. If the sauce simmers too thick before the pasta is done, thin it with a few spoonfuls of pasta water.
