- Bring a pot of water to a boil and cook noodles until chewy-tender. Drain, rinse with cold water, and set aside.
- Heat vegetable oil in a skillet over medium heat. Sizzle garlic for 30 seconds until fragrant, then add soy sauces, sugar, and half the scallions. Let bubble for 20 seconds.
- Toss noodles in the sauce until coated, about 1 minute. Drizzle with sesame oil, toss once more, and serve topped with remaining scallions and red pepper flakes.
Notes
The dark soy sauce gives the noodles a glossy, deep brown color but adds only mild flavor; if omitted, the dish will still taste great. Use leftover noodles cold or reheated in a skillet with a splash of water.
