Soy Sauce Noodles Recipe

Ingredients
  

  • 8 oz dried lo mein noodles (or spaghetti)
  • 3 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp brown sugar
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 3 scallions, sliced thin
  • 1 tbsp sesame oil
  • Crushed red pepper flakes, to taste

Method
 

  1. Bring a pot of water to a boil and cook noodles until chewy-tender. Drain, rinse with cold water, and set aside.
  2. Heat vegetable oil in a skillet over medium heat. Sizzle garlic for 30 seconds until fragrant, then add soy sauces, sugar, and half the scallions. Let bubble for 20 seconds.
  3. Toss noodles in the sauce until coated, about 1 minute. Drizzle with sesame oil, toss once more, and serve topped with remaining scallions and red pepper flakes.

Notes

The dark soy sauce gives the noodles a glossy, deep brown color but adds only mild flavor; if omitted, the dish will still taste great. Use leftover noodles cold or reheated in a skillet with a splash of water.
