Soy Sauce Eggs Recipe

Ingredients
  

  • 4 large eggs
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 2 tbsp sugar
  • 1/2 cup water

Method
 

  1. Bring a pot of water to a boil, lower in eggs, and boil for 6 minutes. Immediately transfer to ice water, then peel.
  2. Whisk soy sauce, mirin, sugar, and water in a container until the sugar dissolves.
  3. Add peeled eggs to the marinade, top with a paper towel to submerge, cover, and refrigerate at least 4 hours.
  4. Remove eggs from marinade, pat dry, slice in half, and serve.

Notes

The hands-on time is quick, but the eggs need at least 4 hours of marinating to absorb flavor. For the deepest color and taste, soak them overnight. You can reuse the marinade once: strain, boil, and cool it first.
