Soy Marinated Eggs Recipe

Ingredients
  

  • 6 large eggs, cold from the fridge
  • 1/2 cup soy sauce
  • 1/4 cup water
  • 2 tbsp rice vinegar
  • 1 tbsp honey or sugar
  • 3 garlic cloves, thinly sliced
  • 2 green onions, sliced
  • 1 tsp toasted sesame seeds
  • 1 red chili, sliced (optional)

Method
 

  1. Boil the eggs for 6 minutes, then plunge into ice water and let them cool for 5 minutes.
  2. Whisk the soy sauce, water, rice vinegar, and honey together, then stir in the garlic, green onions, sesame seeds, and chili.
  3. Peel the eggs under running water and submerge them in the marinade, then refrigerate for at least 6 hours or overnight.
  4. Slice the eggs in half and serve over hot rice with a spoonful of the marinade and extra green onion on top.

Notes

The marinating time is not included in the prep or cook times; plan for at least 6 hours in the fridge. For the custardy yolk shown here, stick to 6 minutes and use an ice bath immediately after boiling.
