Method
- Whisk soy sauce, rice vinegar, sesame oil, garlic, ginger, brown sugar, and black pepper until smooth.
- Place beef in a bag or dish, pour marinade over, and turn to coat. Refrigerate 2 to 24 hours.
- Thread beef onto skewers, leaving a small gap between pieces. Let sit at room temperature 15 minutes.
- Grill over medium-high heat, about 400°F (200°C), turning every 2 to 3 minutes, until charred and cooked to desired doneness, 8 to 10 minutes.
- Rest skewers 3 to 4 minutes, then top with sesame seeds and sliced scallions if you like, and serve.
Notes
Active prep and cook time is 25 minutes; add 2 to 24 hours for marinating. If using wooden skewers, soak them in water for 30 minutes before threading to prevent burning. The internal temperature for medium-rare is 130°F (54°C) and for medium is 140°F (60°C).
