Soy-Ginger Beef Kabob Marinade Recipe

Ingredients
  

  • 1.5 lbs boneless beef sirloin or ribeye, cut into 1-inch cubes
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tbsp brown sugar
  • 1/2 tsp black pepper

Method
 

  1. Whisk soy sauce, rice vinegar, sesame oil, garlic, ginger, brown sugar, and black pepper until smooth.
  2. Place beef in a bag or dish, pour marinade over, and turn to coat. Refrigerate 2 to 24 hours.
  3. Thread beef onto skewers, leaving a small gap between pieces. Let sit at room temperature 15 minutes.
  4. Grill over medium-high heat, about 400°F (200°C), turning every 2 to 3 minutes, until charred and cooked to desired doneness, 8 to 10 minutes.
  5. Rest skewers 3 to 4 minutes, then top with sesame seeds and sliced scallions if you like, and serve.

Notes

Active prep and cook time is 25 minutes; add 2 to 24 hours for marinating. If using wooden skewers, soak them in water for 30 minutes before threading to prevent burning. The internal temperature for medium-rare is 130°F (54°C) and for medium is 140°F (60°C).
