Ingredients
  

  • 1/4 cup olive oil
  • Juice of 2 limes (about 1/4 cup)
  • 3 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper (optional)
  • 2 lbs boneless skinless chicken thighs or breasts

Method
 

  1. Whisk together the olive oil, lime juice, garlic, chili powder, cumin, smoked paprika, oregano, salt, and cayenne in a bowl until combined.
  2. Place the chicken in a large zip-top bag or dish, pour the marinade over it, and coat every piece well. Seal and refrigerate for at least 30 minutes, or up to 4 hours for thighs (2 hours for breasts).
  3. Preheat a grill or grill pan to medium-high (about 400°F). Remove the chicken from the marinade and cook for 5 to 7 minutes per side for thighs, or 6 to 8 minutes per side for breasts, until the internal temperature reaches 165°F.
  4. Let the chicken rest on a cutting board for 5 minutes, then slice against the grain and serve.

Notes

Marinating at least 30 minutes is key, but a longer soak deepens the flavor. Discard any used marinade. If you prefer to bake, arrange the chicken on a foil-lined sheet and roast at 425°F for 20 to 25 minutes. The short rest after cooking keeps it juicy when you slice.
