- In a large heavy pot over medium heat, cook the diced bacon until crisp, about 6 to 8 minutes. Reduce heat to medium-low, add onion and garlic, and cook until soft, 3 to 4 minutes.
- Add the chopped cabbage, sugar, salt, black pepper, and red pepper flakes. Pour in the chicken broth and stir for about 2 minutes until the cabbage starts to wilt.
- Cover, reduce heat to low, and simmer for 45 to 50 minutes, stirring once or twice, until the cabbage is very tender.
- Remove from heat, stir in the apple cider vinegar, and taste for salt. Serve hot.
Notes
For the richest flavor, let the pot sit off the heat for 5 minutes before serving so the juices settle. Leftovers taste even better the next day and reheat easily with a splash of broth.
