- After cooking ham, keep the skillet over medium heat, pour in coffee and water or broth, and scrape up all the browned fond.
- Bring to a gentle boil, reduce heat to low, and simmer about 5 minutes until reduced by a third. Taste, then add sugar and pepper; salt only if needed.
- Pour through a fine mesh strainer into a serving vessel. Serve hot over biscuits and ham.
Notes
This gravy is naturally thin, not thick like a roux-based sauce. If you prefer a little body, stir in a teaspoon of cornstarch mixed with cold water during the simmer.
