Southern Pecan Pie Recipe

Ingredients
  

  • 1 9-inch unbaked pie crust
  • 1 1/2 cups pecan halves
  • 3 large eggs, room temperature
  • 1 cup dark corn syrup
  • 1/2 cup packed light brown sugar
  • 1/4 cup unsalted butter, melted and cooled
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp salt

Method
 

  1. Fit the pie dough into a 9-inch pie dish, crimp the edges, and chill.
  2. Heat oven to 350°F (175°C) and toast pecans on a baking sheet for 8 to 10 minutes, then cool and roughly chop.
  3. Whisk eggs, corn syrup, brown sugar, butter, vanilla, and salt until smooth, then stir in the chopped pecans.
  4. Pour filling into the chilled crust, top with reserved pecan halves, and bake on a baking sheet for 50 to 55 minutes until the edges are set and the center jiggles slightly.
  5. Cool completely on a wire rack, then slice and serve.

Notes

The pie needs at least 2 hours of cooling time to set properly. You can make it a day ahead, store it covered at room temperature, and slice it the next day.
