Method
- In a small bowl, combine yeast, warm water, and a pinch of the sugar. Let stand until foamy, about 5 to 8 minutes.
- In a large bowl, whisk flour, remaining sugar, baking powder, baking soda, and salt. Cut in cold butter until mixture resembles coarse meal with some pea-sized pieces.
- Stir buttermilk and yeast mixture into dry ingredients until a shaggy dough forms. Do not overmix.
- Transfer dough to a greased bowl, cover, and refrigerate at least 2 hours or overnight.
- Turn dough onto a floured surface, pat to 3/4 inch thick, fold in half, and pat again. Cut with a 2 1/2-inch round cutter without twisting. Place biscuits on a parchment-lined sheet with edges touching. Let rest 10 minutes.
- Preheat oven to 400°F (200°C). Bake biscuits 12 to 15 minutes until golden. Brush tops with melted butter and serve warm.
Notes
The dough needs at least 2 hours in the fridge before shaping. For the fluffiest results, make the dough the night before and let it chill overnight. Biscuits can be frozen unbaked: place cut biscuits on a tray, freeze solid, then transfer to a bag and bake from frozen, adding 3 to 4 minutes.
