- Combine giblets, onion half, celery, and 4 cups water in a saucepan. Bring to a boil, reduce heat, cover, and simmer until giblets are tender (1 to 1 1/2 hours for turkey, about 1 hour for chicken). Remove giblets, strain broth, and reserve 4 cups.
- Melt butter in a skillet over medium heat. Add chopped onion and cook until soft, 5 minutes. Sprinkle in flour, whisk constantly until deep golden, 4 to 5 minutes.
- Slowly whisk in reserved broth. Bring to a gentle simmer and cook, whisking occasionally, until thickened, 10 to 15 minutes.
- Chop the cooked giblets and hard-boiled eggs. Stir them into the gravy along with sage, salt, and pepper. Simmer 5 minutes.
- Ladle into a serving dish and serve hot.
Notes
The giblets can be simmered a day ahead and refrigerated in their broth. Reheat gently before proceeding. If the gravy thickens after sitting, stir in a little warm broth.
