Southern Boiled Cabbage Recipe

Ingredients
  

  • 1 medium head green cabbage (about 2 lbs), cored and chopped into 1-inch pieces
  • 4 slices thick-cut bacon, chopped
  • 1 medium yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tbsp apple cider vinegar
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)

Method
 

  1. Cook the bacon over medium heat in a large Dutch oven until crisp, about 6 to 8 minutes. Remove with a slotted spoon, leaving the fat in the pot.
  2. Add the onion to the bacon fat and cook until soft, about 5 minutes. Stir in the garlic and optional red pepper flakes, cooking 30 seconds more.
  3. Add the cabbage, broth, salt, and pepper. Bring to a simmer, cover, and cook over medium-low heat for 20 to 25 minutes, stirring once, until tender.
  4. Remove from heat, stir in the vinegar, and top with the reserved bacon. Serve hot.

Notes

A pinch of sugar can balance any bitterness if the cabbage tastes sharp, but the vinegar usually does the trick. Leftovers taste even better the next day after the flavors meld.
