Sous Vide Egg Bites Recipe

Ingredients
  

  • 4 large eggs, at room temperature
  • ½ cup full-fat cottage cheese
  • ¼ cup shredded Gruyère cheese
  • 2 strips cooked bacon, finely crumbled
  • ¼ tsp fine sea salt
  • Pinch of ground nutmeg
  • Unsalted butter, for greasing

Method
 

  1. Blend the eggs, cottage cheese, salt, and nutmeg on high for 30 seconds until completely smooth. Pour into a spouted container and stir in the Gruyère and bacon by hand.
  2. Butter four 4‑oz mason jars, divide the mixture evenly, and twist the lids on finger‑tight.
  3. Submerge the jars in a 172°F (78°C) sous vide bath and cook for 60 minutes. Remove and cool 5 minutes.
  4. Run a knife around the edge, unmold each bite onto a plate, and serve warm.

Notes

Let the bites rest those 5 minutes before you try to remove them; they pull away from the glass and release far easier. If you are using boneless ham or sausage, pre-cook it the same way as the bacon to avoid any raw fat pockets.
