- Cream the butter and brown sugar together until light and fluffy, then beat in the egg, vanilla, and sourdough discard until smooth.
- Whisk the flour, baking soda, cinnamon, nutmeg, and salt, then stir into the wet mixture just until the flour disappears.
- Fold in the oats and raisins, cover, and chill the dough for at least 30 minutes.
- Preheat the oven to 350°F (175°C). Scoop the dough onto parchment-lined baking sheets and bake for 11 to 13 minutes, until edges are golden and centers look set. Cool on the sheet for 5 minutes, then transfer to a rack.
Notes
Chilling the dough is not baked into the prep time—plan for at least 30 minutes in the fridge before scooping. If you like a slightly taller cookie, pile the dough into a tall mound instead of a round ball and freeze the shaped dough for 10 minutes right before baking.
