Sourdough English Muffin Recipe

Ingredients
  

  • 1 cup (240g) active sourdough starter, fed and bubbly
  • 1 cup (240ml) lukewarm whole milk
  • 2 tbsp honey
  • 1 tsp fine sea salt
  • 3 cups (375g) all-purpose flour
  • 2 tbsp unsalted butter, melted, plus extra for greasing the griddle
  • Cornmeal or semolina, for dusting

Method
 

  1. In a large bowl, mix the starter, milk, honey, and salt. Add the flour and melted butter, and stir into a shaggy dough. Knead briefly in the bowl until no dry spots remain.
  2. Transfer to an oiled bowl, cover, and refrigerate for 8 to 12 hours.
  3. Turn the dough onto a floured surface and pat it ¾ inch thick. Cut 8 rounds, dust both sides with cornmeal, and place on a cornmeal-dusted baking sheet.
  4. Cover with a towel and proof at room temperature for 45 to 60 minutes, until slightly puffed.
  5. Preheat a griddle or skillet over medium-low heat. Butter lightly, then cook muffins in batches, 6 to 8 minutes per side, until deep golden and cooked through.
  6. Cool on a rack for 5 minutes, then fork-split each muffin, toast, and serve warm.

Notes

If your kitchen is cool, the proofing may take closer to 60 minutes; look for a domed, airy feel. For a thinner, crispier crust, cook the muffins with the griddle seam side down first and use only a whisper of butter.
