Method
- Combine flour, starter, milk, melted butter, sugar, egg, and salt. Knead with a dough hook for 8 minutes until smooth and slightly tacky.
- Transfer to an oiled bowl, cover, and refrigerate at least 8 hours and up to 12 hours.
- Roll the cold dough into a 12x18-inch rectangle. Spread with 3 tbsp soft butter, then sprinkle with brown sugar and cinnamon.
- Roll up tightly from the long side, slice into 9 pieces, and place cut side up in a buttered 9x9-inch pan.
- Cover and let rise 45–60 minutes until puffy. Bake at 350°F (175°C) for 25–30 minutes until golden.
- Beat cream cheese, powdered sugar, milk, and vanilla. Spread the glaze over warm rolls and serve.
Notes
Prep time does not include the overnight chill; plan to start the dough the night before. For the tangiest flavor, let the dough rest a full 12 hours. The dough can be refrigerated up to 18 hours, though the rolls may taste more sour.
