Sourdough Cinnamon Rolls Recipe

Ingredients
  

  • 3 cups all-purpose flour
  • 1/2 cup sourdough starter discard
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp fine sea salt
  • 1/2 cup packed light brown sugar
  • 1 1/2 tbsp ground cinnamon
  • 3 tbsp unsalted butter, very soft
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 tbsp whole milk
  • 1 tsp vanilla extract

Method
 

  1. Combine flour, starter, milk, melted butter, sugar, egg, and salt. Knead with a dough hook for 8 minutes until smooth and slightly tacky.
  2. Transfer to an oiled bowl, cover, and refrigerate at least 8 hours and up to 12 hours.
  3. Roll the cold dough into a 12x18-inch rectangle. Spread with 3 tbsp soft butter, then sprinkle with brown sugar and cinnamon.
  4. Roll up tightly from the long side, slice into 9 pieces, and place cut side up in a buttered 9x9-inch pan.
  5. Cover and let rise 45–60 minutes until puffy. Bake at 350°F (175°C) for 25–30 minutes until golden.
  6. Beat cream cheese, powdered sugar, milk, and vanilla. Spread the glaze over warm rolls and serve.

Notes

Prep time does not include the overnight chill; plan to start the dough the night before. For the tangiest flavor, let the dough rest a full 12 hours. The dough can be refrigerated up to 18 hours, though the rolls may taste more sour.
