Method
- Preheat oven to 425°F (220°C). Whisk flour, baking powder, baking soda, and salt in a large bowl.
- Cut in cold butter until the mixture forms pea-sized pieces and coarse crumbs.
- Toss in cheddar, then stir in sourdough discard and buttermilk until a shaggy dough just comes together.
- Turn onto a floured surface. Pat to 1-inch thick, fold in half, and repeat 3-4 times. Pat to 1-inch thickness and cut with a 2.5-inch biscuit cutter, pressing straight down.
- Place biscuits on a parchment-lined sheet, brush tops with buttermilk, and bake 12-15 minutes until puffed and deeply golden. Serve warm.
Notes
For extra flaky layers, freeze the cut biscuits for 10 minutes before they hit the oven. If you’re measuring flour with a scale, 2 cups is 250 grams. No buttermilk on hand? Stir 1 1/2 teaspoons lemon juice into 1/2 cup whole milk and let it sit 5 minutes.
