Sourdough Apple Fritter Bread Recipe

Ingredients
  

  • 2 medium apples (Honeycrisp or Granny Smith), peeled, cored, and chopped
  • 2 tbsp brown sugar, packed
  • 1 tsp ground cinnamon, plus 1 tsp for swirl
  • Pinch ground nutmeg
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • .5 tsp baking soda
  • .5 tsp salt
  • .5 cup unsalted butter, softened
  • .75 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • .75 cup sourdough discard
  • .5 cup whole milk
  • 2 tbsp brown sugar mixed with 1 tsp cinnamon (for swirl)
  • 1 cup powdered sugar
  • 1-2 tbsp milk
  • .5 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F. Toss chopped apples with 2 tbsp brown sugar, 1 tsp cinnamon, and nutmeg; set aside.
  2. Whisk flour, baking powder, baking soda, salt, and 1 tsp cinnamon. Cream butter and sugar, then beat in eggs, vanilla, and discard. Alternate adding dry mix and milk.
  3. Spread half the batter in a greased 9x5 pan. Top with half the apples and half the cinnamon swirl. Repeat with remaining batter, apples, and swirl. Swirl with a knife.
  4. Bake 50-60 minutes until a toothpick comes out clean. Tent with foil if browning too fast.
  5. Cool 10 minutes in pan, then turn out. Whisk powdered sugar, 1 tbsp milk, and vanilla for glaze; add more milk to thin. Drizzle over warm loaf and slice.

Notes

The loaf slices most cleanly when completely cool, but the glaze is at its best when drizzled on while still warm. Let it cool fully before storing, or the glaze will get sticky.
