Soft Whole Wheat Cinnamon Rolls Recipe

Ingredients
  

  • 1 cup whole milk, warmed
  • 2 1/4 teaspoons (1 packet) instant yeast
  • 1 1/2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon fine sea salt
  • 1/4 cup unsalted butter, melted and cooled slightly
  • 1/4 cup plain Greek yogurt
  • 1 large egg, at room temperature
  • 3 tablespoons very soft unsalted butter
  • 2/3 cup packed brown sugar
  • 2 tablespoons ground cinnamon
  • 4 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons whole milk

Method
 

  1. Warm the milk to 110°F. Whisk whole wheat flour, all-purpose flour, sugar, yeast, and salt in a large bowl. Stir in milk, melted butter, yogurt, and egg until a shaggy dough forms.
  2. Turn dough out and knead 8 minutes until smooth. Place in a greased bowl, cover, and let rise 1 hour until doubled.
  3. Punch down dough and roll to a 12x16-inch rectangle. Spread the soft butter over the dough, leaving a 1-inch border on one long edge. Sprinkle evenly with brown sugar and cinnamon.
  4. Roll tightly from the long edge with filling to the end. Pinch seam and cut into 12 rolls. Place in a greased 9x13-inch dish, cover, and proof 30 minutes.
  5. Preheat oven to 350°F. Bake rolls 22-24 minutes until golden and 190°F in the center. Beat cream cheese, powdered sugar, vanilla, and milk until smooth. Spread frosting over warm rolls.

Notes

The dough can be made ahead: after the first rise, punch it down, cover tightly, and refrigerate overnight. Let it come to room temperature before rolling. For a more caramelized bottom, sprinkle a little brown sugar in the greased baking dish before adding the rolls.
