Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup freeze-dried strawberries, finely ground
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar, plus extra for rolling
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon lemon zest (optional)

Method
 

  1. Beat the butter and sugar until light and fluffy, then mix in the egg and vanilla.
  2. Whisk the flour, ground strawberries, baking powder, and salt together; stir into the wet ingredients until just combined. Chill the dough for 30 minutes.
  3. Preheat the oven to 350°F. Roll the dough into balls, coat them in sugar, and place on parchment-lined baking sheets. Bake 10 to 12 minutes, until edges are lightly golden. Cool on the sheet for 5 minutes, then transfer to a wire rack.

Notes

Chill time (30 minutes) is not included in the prep time. Store the cookies in an airtight container; they will stay soft for several days. If the dough feels too sticky to roll after chilling, let it sit at room temperature for 5 minutes.
