Ingredients
  

  • 1 cup vanilla protein powder
  • 1/2 cup blanched almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sweetener
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract

Method
 

  1. Whisk together protein powder, almond flour, coconut flour, baking soda, and salt in a bowl.
  2. Beat butter and sweetener with a mixer until light and fluffy, about 2 minutes.
  3. Add the egg and vanilla; beat on low just until combined.
  4. Fold the dry ingredients into the wet mixture until no streaks remain.
  5. Scoop dough into rounded tablespoonfuls, roll into balls, place on a lined sheet, and flatten to 1/2 inch thick.
  6. Bake at 350°F for 10–12 minutes until edges are golden, then cool on a wire rack.

Notes

If the dough feels sticky, chill it for 15–30 minutes before shaping. For a sugar cookie finish, roll the dough balls in a little extra sweetener before flattening.
