Soft Peppermint Christmas Cookies Recipe

Ingredients
  

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp fine sea salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp peppermint extract
  • 1/3 cup crushed candy canes or peppermint candies, plus extra for topping

Method
 

  1. Preheat oven to 350°F. Beat butter and sugar until pale and fluffy, about 2 minutes.
  2. Beat in egg and peppermint extract until smooth.
  3. Mix in flour, baking powder, and salt on low, then fold in 1/3 cup crushed candy cane.
  4. Scoop dough onto lined baking sheets and bake 10 to 12 minutes, until edges set.
  5. Immediately press extra crushed candy cane onto hot cookies, cool 5 minutes on the pan, then transfer to a rack and serve.

Notes

The dough does not need to chill, but if it feels soft, a quick 10 minutes in the fridge makes scooping easier. For the crunchiest topping, press the candy bits on within seconds of pulling the tray from the oven—the residual heat sets them without melting them into syrup.
