- Cream butter, granulated sugar, and brown sugar with a hand mixer on medium speed for about 2 minutes until fluffy.
- Add peanut butter, egg, and vanilla, then beat until smooth, about 1 minute.
- Whisk together flour, baking soda, and salt. Mix into the wet ingredients on low speed just until no dry streaks remain, about 1 minute.
- Roll rounded tablespoonfuls of dough into balls and place on parchment-lined baking sheets 2 inches apart. Press a deep well into the center of each with your thumb or the back of a teaspoon.
- Spoon ½ teaspoon jam into each well. Bake at 350°F (175°C) for 10 to 12 minutes, until edges are set and lightly golden. Cool on the pan for 5 minutes, then transfer to a wire rack.
Notes
If the dough feels too sticky to roll, chill it for 10 minutes before shaping. Use a thick jam for neat centers and avoid overfilling.
