Ingredients
  

  • 2 1/4 cups all-purpose flour
  • 3/4 cup maple sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp cornstarch

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment. Cream butter and maple sugar until fluffy, about 2 minutes.
  2. Beat in egg and vanilla. Whisk flour, baking powder, salt, and cornstarch separately, then mix into the butter mixture until just combined.
  3. Scoop 1.5-tablespoon balls of dough, roll them smooth, and place 2 inches apart on the sheets.
  4. Bake 8 to 10 minutes until edges are golden and centers look slightly underdone. Let cool on the sheet for 5 minutes.
  5. Transfer to a wire rack to cool completely; serve barely warm or at room temperature.

Notes

If the dough feels sticky to handle, chill it for 10 minutes before rolling. Rolling the balls in extra maple sugar before baking adds a lovely crunchy crust.
