- Preheat oven to 350°F (175°C) and line a baking sheet with parchment. Whisk almond flour, sweetener, baking powder, and salt in a bowl.
- In another bowl, beat cream cheese and melted butter until smooth. Add egg, lemon juice, vanilla, and lemon zest, and beat until combined.
- Add the dry mixture to the wet mixture. Stir just until a soft dough forms.
- Scoop tablespoonfuls onto the sheet, flatten slightly, and bake 10 to 12 minutes until edges are set and lightly golden.
- Cool on the sheet for 2 minutes, then move to a wire rack to cool completely. Serve.
Notes
If you have time, chilling the dough for 30 minutes yields an even chewier texture. Let the cookies cool fully before storing, and keep a scrap of parchment between layers to preserve their softness.
