Soft Gluten-Free Breadsticks Recipe

Ingredients
  

  • 1 cup warm whole milk (110°F)
  • 2 ¼ tsp instant yeast
  • 1 tbsp sugar
  • 2 ½ cups gluten-free all-purpose flour blend (with xanthan gum)
  • 1 tsp fine sea salt
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tsp dried oregano or Italian seasoning

Method
 

  1. Whisk the warm milk, sugar, and yeast in a large bowl and let sit for 5 minutes until frothy. Add the flour, salt, and olive oil and mix into a soft dough. Cover and let rise in a warm spot for 1 hour.
  2. Punch the dough down, turn it onto a floured surface, and divide into 8 pieces. Roll each into a 6-inch rope and place on a parchment-lined baking sheet.
  3. Bake at 400°F (200°C) for 12 to 15 minutes, until the bottoms are golden and the tops are lightly browned.
  4. In a small bowl, mix the melted butter with the garlic and oregano. Brush the mixture over the hot breadsticks as soon as they come out of the oven.
  5. Serve the breadsticks warm.

Notes

The dough needs about 1 hour to rise; that time is not included in the prep or cook estimates. The recipe makes 8 breadsticks, and a serving is 2. For the softest result, use a flour blend that already contains xanthan gum.
