Method
- Cream the butter and brown sugar until light and fluffy, about 3 minutes. Beat in the egg and honey.
- Whisk the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt in a bowl. With the mixer on low, slowly add to the butter mixture until a soft dough forms.
- Divide the dough in half, shape into disks, wrap, and refrigerate at least 1 hour.
- Preheat oven to 350°F (175°C). Roll one disk to 1/4 inch thick, cut shapes, and transfer to parchment-lined sheets. Repeat with remaining dough.
- Bake 8 to 10 minutes per sheet, until edges are firm. Cool on the sheet 5 minutes, then move to a rack. Cool completely before icing or dusting with powdered sugar.
Notes
Chill time is at least 1 hour and not included in prep. Baking times are per sheet; you will get about two sheets of cookies. The icing is optional, a simple mix of powdered sugar and milk.
