Ingredients
  

  • 3/4 cup unsalted butter, softened
  • 3/4 cup packed dark brown sugar
  • 1 large egg
  • 1/4 cup honey
  • 2 1/4 cups all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Method
 

  1. Cream the butter and brown sugar until light and fluffy, about 3 minutes. Beat in the egg and honey.
  2. Whisk the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt in a bowl. With the mixer on low, slowly add to the butter mixture until a soft dough forms.
  3. Divide the dough in half, shape into disks, wrap, and refrigerate at least 1 hour.
  4. Preheat oven to 350°F (175°C). Roll one disk to 1/4 inch thick, cut shapes, and transfer to parchment-lined sheets. Repeat with remaining dough.
  5. Bake 8 to 10 minutes per sheet, until edges are firm. Cool on the sheet 5 minutes, then move to a rack. Cool completely before icing or dusting with powdered sugar.

Notes

Chill time is at least 1 hour and not included in prep. Baking times are per sheet; you will get about two sheets of cookies. The icing is optional, a simple mix of powdered sugar and milk.
