Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened (frosting)
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon almond extract (frosting)
  • Pink gel food coloring
  • Pink sanding sugar or rainbow jimmies, for topping (optional)

Method

  1. Preheat oven to 350°F. Cream 1 cup butter and sugar until light and fluffy, 2 to 3 minutes.
  2. Beat in egg, vanilla, and 1/2 teaspoon almond extract on low until combined.
  3. Whisk flour, baking powder, cream of tartar, and salt. Gradually mix into wet ingredients until a soft dough forms.
  4. Scoop 3-tablespoon balls onto parchment-lined sheets. Bake 9 to 11 minutes until edges are set and centers look slightly underdone. Cool completely.
  5. Beat 1/2 cup butter until creamy, then add powdered sugar, milk, 1/2 teaspoon almond extract, and food coloring. Whip 2 to 3 minutes.
  6. Spread frosting over cooled cookies, top with sprinkles, and serve.

Notes

Chilling the dough is not required, but if your kitchen is above 75°F, give it 15 minutes in the fridge so the cookies don’t spread too much. Let the cookies cool fully before frosting. Any leftover frosting can be stored in the fridge and reused on graham crackers or banana bread.
